bisia's bites: zapiekanki

zapiekani are a polish street food. they are one of my favorite foods, and since i can't find them in the US- i make them! zapiekani are a baguette sliced in half lengthwise, finished off with some toppings and toasted. it is pretty flexible to make and you can make various substitutions depending what you have on hand. i make the traditional one below.

baguette
kielbasa (or can substitute with salami)
cheese (use any you like buy one that melts well)
mushrooms
scallions
ketchup
paprika
salt

1. cut the baguette lengthwise in half and top with kiebasa first and then with the cheese. sprinkle with paprika. toast the baguette
2. meanwhile, sautee your sliced mushrooms, seasoning them with salt toward the end
   
3. once the baguette is toasted, top with sauteed mushrooms, then with thinly sliced scallions
4. finish off with ketchup
