bisia's bites: bacon wrapped scallops

  1. get some fresh sea scallops. frozen are just fine, but let them thaw first. season with salt and pepper.
  2. place the appropriate amount of bacon strips (one per scallop) flat on a cookie sheet and throw into the oven for about 5 minutes. you want the bacon to be about half done, but still pliable so you will be able to work with it.
  3. once the bacon is at a workable temperature, wrap each strip around the scallop. secure with a toothpick it necessary.
  4. spread some olive oil on a grill or pan over very high heat. fry the bacon wrapped scallops 3 minutes on each side. 
  5. plate and dress each scallop with a small dallop of butter right before serving.

this is a delicious and very fast appetizer that is full of flavor! the scallops melt in your mouth. their naturally sweet and mild flavor packs a punch when combined with the savory, salty flavor from the bacon. when the two are grilled together the scallop becomes infused this these deep flavors. each bite has a pleasant texture, the crispy bacon breaks to the soft scallop inside, all pulled together with the richness of the butter!
